ROCHESTER - Since it opened a couple of years ago at The Ridge, Evviva Trattoria has come to be recognized as not only the region's finest gluten-free Italian restaurant, but also among the finest for foodies of all persuasions. When I went there a week ago, that trajectory held true. I got the Evviva Club, which was spectacular to look at and even better to consume. Packed between two thick slices of foccacia bread there was an abundance of thick-sliced smoked bacon, a healthy portion of pan seared chicken breast, avocado, provolone, romaine, tomatoes, balsamic glaze and pesto. I had never had foccacia bread before, but it's composed of flour, yeast, water, salt and olive oil. When I had my first bite it tasted like the best homemade corn bread I'd ever had, so I don't know what they added to the basic recipe, but whatever it was, I give it a "10." My sandwich came with a side caesar salad, but if you're not gluten free, you get their homemade chips, which are delicious according to my daughter. The sandwich was piled high with plenty of protein and plenty to be enjoyed for the next day's lunch when it actually tastes even better. The experience was elevated with the service of our waitress, Abby, who was very attentive, checking on us after we'd had a couple of bites to see if we needed anything else. The wait time for my entree was no more than 15 minutes. The Evviva Club was $18, pretty reasonable for next-level cuisine. To check out their menus click here
