Mangiare, mangiare! Evviva Trattoria ready to plate some authentic Italian fare

ROCHESTER - Ever since The Ridge Marketplace opened seven years ago, its developer, Waterstone Properties, has steadfastly maintained that tops on the public's wish list has always been an authentic Italian restaurant.
That craving will come to delicious fruition today at 4 p.m. when Evviva Trattoria holds its grand opening at The Ridge.
The restaurant, located at 155 Market Place Blvd., will feature eclectic Italian fare that checks all the boxes, said Evviva Trattoria District Manager Charles Belanger.
"We pull flavors from all over the Mediterranean," he told The Rochester Voice on Tuesday. "Classics Italian American like chicken parmesan, chicken marsala. We also do some different things like use our woodstone hearth oven to cook our wings that we brine up a couple of days, then crisp them and they get served with a Korean barbecue sauce that has a kick."
Evviva Trattoria is owned by the same company as the 110 Grill, and like the 110 Grill, the restaurant is open and airy, and comes with a layout that allows diners to watch their food being prepared.
They also take diners' food allergies very seriously, Belanger said, including those with gluten issues.
He said 95 percent of their menu can be made gluten free, something few Italian restaurants boast.
Belanger said they also have specials through the week, including buy one pizza get one free on Monday, complete kids meals for $5 on Tuesday and a Family Style Pasta Night on Wednesday that includes a three-course meal for just $20 each.
They also have what they call "Appy" hour Monday through Friday where appetizers are just $6.
Today's grand opening will be followed by a Rochester Chamber ribbon cutting on Thursday at 4 p.m.
